When it is cold outside there is nothing more satisfying than an old-fashioned soup or stew. The kind that you throw together in the morning and let simmer on your stove all day. Adding hominy to any of your favorite soups or stews can add texture and flavor. Here is one of our favorite recipes that includes hominy…. enjoy!

Green Chili Stew

Ingredients:
2lbs beef stew meat
¼ cup all-purpose flour
¼ cup butter
6 cloves of garlic, minced
3 cups beef broth
1 12oz bottle dark Mexican beer
1 cup mild or medium green salsa
2 tsp dried oregano
1 tsp ground cumin
3 medium potatoes cubed
1 can of Teasdale White Hominy
2 4oz cans diced green chilies, drained
1 package of flour tortillas



Directions:
  • Toss beef cubes with flour and in a 4+ quart Dutch oven brown the beef cubes, half at a time, in melted butter; remove meat from the pan with a slotted spoon and save for later.
  • Add garlic to the pan and cook 1 minute; add broth, beer, salsa, oregano and cumin. Return the meat to pot. Bring to a boil; reduce heat. Cover and simmer about 1 ¼ hours or until meat is tender.
  • Add potatoes and simmer about 30minutes more or until potatoes are tender.
  • Add hominy and green chilies, heat through.
  • Serve with warm flour tortillas.
